Caldo de Pollo (chicken soup)

Ingredients

  • 10 c. water
  • 3 lbs chicken breast
  • 1/2 onion
  • 1-2 cloves garlic
  • 1 rib of celery, sliced
  • 2 carrots, chopped
  • 1 - 1 1/2 tbls salt (himalayon pink salt)
  • 1-2 medium zucchini, diced
  • 1/2 - 3/4 head of cauliflower, cut into bite size pieces
  • 1/2 head of broccoli, cut into bite size pieces
  • 1/2 small head of cabbage, chopped
  • 1 can (27 oz) El Pato Mexican Hot Style Tomato Sauce
  • cilantro (optional)
  • lime or lemon (optional)

Description

This is a traditional Mexican feel good soup made with chicken breast instead of thighs and drumsticks to make it healthier and approved. This recipe is a -3 as is or would be a -1 if you chose to use the dark meat instead.
