Caldo de Pollo (chicken soup)
Ingredients
- 10 c. water
- 3 lbs chicken breast
- 1/2 onion
- 1-2 cloves garlic
- 1 rib of celery, sliced
- 2 carrots, chopped
- 1 - 1 1/2 tbls salt (himalayon pink salt)
- 1-2 medium zucchini, diced
- 1/2 - 3/4 head of cauliflower, cut into bite size pieces
- 1/2 head of broccoli, cut into bite size pieces
- 1/2 small head of cabbage, chopped
- 1 can (27 oz) El Pato Mexican Hot Style Tomato Sauce
- cilantro (optional)
- lime or lemon (optional)

- Cook Time: 45 min
Description
This is a traditional Mexican feel good soup made with chicken breast instead of thighs and drumsticks to make it healthier and approved. This recipe is a -3 as is or would be a -1 if you chose to use the dark meat instead.
