Chicken Gumbo with Rice

Ingredients
- 1 1/2 cups cooked brown rice
- 1 1/2 lbs boneless, skinless chicken breasts, cut into 4 oz. pieces
- 1 tbls liquid smoke
- 1/2 cup Scallion, chopped
- 1/2 large onion, chopped
- 1/2 tsp Worcestershire sauce
- 2 green bell peppers, chopped
- 2 tsp minced garlic
- 4 tbls ghee, butter, or MCT oil
- 4 tbls Tony Chachere's Creole Seasoning
- 6 1/2 cups water
- 6 tbls Carbquik
- Prepare Time: 20 min
- Cook Time: 45 min
Description
The roux is homemade. Purchased roux tends to be too bitter. I used liquid smoke so that I could give the gumbo the smoked flavor you would get if you used smoked sausage that most Cajun gumbos have as an ingredient.
