Coconut Curry Pumpkin Soup

Ingredients
- 3 c. pumpkin puree (fresh or canned)
- kosher salt - freshly ground black pepper
- 1/4 c. truvia brown sugar blend, packed
- 2 cups unsweetened coconut milk (do not use canned)
- 1 1/2 tsp. cinnamon
- 1 clove garlic, minced
- 1 small onion, finely chopped (about 1 1/2 c.)
- 1 tsp. nutmeg
- 1/2 tsp. cloves
- 2 tbsp. mct oil
- 2 tsp. curry powder
- 2 tsp. fresh ginger, grated (1 tsp. ground ginger)
- 4 c. fat free vegetable (or chicken) stock
- Prepare Time: 5 min
- Cook Time: 20 min
