Ingredients
- JICAMA SLAW:
- 1 cup Jicama, shredded
- 1 cup red cabbage, shredded
- 1/3 cup red onions, thinly sliced
- 2 tbls apple cider vinegar
- 1/4 cup MCT oil
- 1/4 cup lime juice
- 1 tbls Stevia
- Salt & freshly ground black pepper to taste
- MARINATED SHRIMP:
- 2 chipotle peppers in adobo
- 36 medium shrimp
- 2 red/orange bell peppers sliced thin
- 1 tbls ancho chili powder
- 1 tsp salt
- 1 tsp freshly ground black pepper
- TACOS:
- 2 tbls MCT oil
- 36 medium shrimp (recipe above)
- 6 La Tortilla Factory Low-Carb Flour Tortillas (Soft Taco Size, warmed)
- 3 cups jicama slaw (recipe above)
- 3 scallions, chopped
- 1 bunch cilantro, chopped
- Sriracha
- fresh lime
