Grilled Fajita Stuffed Chicken
Ingredients
- 1/4 cup MCT oil
- juice of 1 lime
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- salt
- ground black pepper
- 2 lb boneless, skinless chicken breasts
- 1 bell pepper, sliced
- 1/2 red onion, sliced
- 1 cup fat free shredded cheese, any flavor or mixture you prefer
- lime wedges, for serving
- chopped cilantro (optional)
Description
Use 1 hand rule for portion of chicken breast. Can be served with another category 2 vegetable or side salad with approved dressing. *
