Megan's Birthday Pumpkin Pie

Ingredients

  • 2 1/2 cups Libby's canned pumpkin, (pure pumpkin}
  • 1/2 cup truvia or other artificial sweetener to taste
  • 1 tbsp. zero calorie butter spray
  • 21/2 tsp pumpkin spice
  • 1 tsp vanilla
  • 1 tsp salt
  • crust:
  • 1 1/4 cups Scandinavian sprinkles or 1 pk. bran crispbread ground in food processor
  • 3/4 cup Walden Farms pancake syrup
  • 3-4 pks truvia (6-8 tsp) or other artificial sweetener of choice
  • Topping: (optional)
  • 1/4 cup almonds or chopped pecans
  • 1/8 cup walden farms pancake syrup

Description

Category 2+c -1 WLM side dish or 0 WLM snack. Pie serves 6-10 people. You may use sugar free syrup in place of Walden Farms if you wish. It adds a few more calories to the recipe but still works. If using as a side dish, pair with category 1 or 7 and use your 1 hand rule for your portion of pie. *
