- 2 chicken breasts, cooked, shredded
- 2 boxes fat free chicken broth (32 oz)
- 1 16 oz package of cauliflower rice
- 3 cloves garlic, minced, sautéed in 2T ghee butter
- 3 stems of green onion, bulb to tip, chopped
- 2 packages of low sodium taco seasoning
- Fresh chopped cilantro (optional garnish)
- Fresh lime (optional garnish)
- Avocado (1/8 - 1/4 diced, depending on amount of other garnishes)
- Dollop (1-2T) nonfat Greek yogurt, optional garnish
