Ingredients
- 1 1/2 pounds boneless skinless chicken breasts, sliced thinly
- 1 cup light coconut milk (Thai Kitchens)
- 4 tablespoons red curry paste
- 2 tablespoons Truvia
- 2-3 tablespoons fish sauce
- 7 Kaffir lime leaves (if can find them), shredded
- 1/2 cup Thai basil or regular basil, shredded
- 1 red chili (any will do), sliced thinly
- 1 pound okra (keep whole)
- 1 pound sugar snap peas
