Skillet Salmon & Veggies
Ingredients
- 2 large carrots
- 2 medium yellow summer squash
- 2 medium zucchini
- 3 tbsp ghee butter
- 2 Tbsp fresh parsley chopped
- 2 garlic cloves, pressed
- 1/2 tsp salt
- 1/8 tsp black pepper
- 4 skinless salmon filets (4-6 oz each), about 1 inch thick

- Cook Time: 9 min
Description
Salmon fillets are sold with the skin on one side, but you can ask for the meat dept to remove the skin, or you can cut the skin off yourself. If you make enough for leftovers, be sure to refrigerate promptly and eat within 24-48 hours.
